Chocolate Chip Cookies

Ingredients:

  • 3 cups almond flour ( I use Anthony’s brand- you can get here )

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • ½ cup of honey

  • 1 teaspoon vanilla

  • 2 eggs

  • 1 to 1 ½ cups of chocolate chips ( I prefer to use Lily’s Chocolate Chips- you can get them here

  • Optional: ½ cup shredded coconut or nuts of your choice

Directions:

  • Heat oven to 375* F

  • Mix all of the dry ingredients in one bowl (minus chocolate chips)

  • Mix all of the wet ingredients in another bowl

  • Slowly mix the wet ingredients into the dry ingredients

  • Add in the chocolate chips

  • Spoon onto baking dish in whatever size cookies you prefer ( I do about a spoon and a half which makes pretty big cookies)

  • Bake about 8-10 minutes ( I prefer gooey cookies and with my oven, I cook them for about 10 minutes. They do tend to brown relatively fast on the bottom, so I tend to under cook them a bit.)
