Chocolate Chip Cookies
Ingredients:
3 cups almond flour ( I use Anthony’s brand- you can get here )
1 teaspoon baking soda
1 teaspoon salt
½ cup of honey
1 teaspoon vanilla
2 eggs
1 to 1 ½ cups of chocolate chips ( I prefer to use Lily’s Chocolate Chips- you can get them here
Optional: ½ cup shredded coconut or nuts of your choice
Directions:
Heat oven to 375* F
Mix all of the dry ingredients in one bowl (minus chocolate chips)
Mix all of the wet ingredients in another bowl
Slowly mix the wet ingredients into the dry ingredients
Add in the chocolate chips
Spoon onto baking dish in whatever size cookies you prefer ( I do about a spoon and a half which makes pretty big cookies)
Bake about 8-10 minutes ( I prefer gooey cookies and with my oven, I cook them for about 10 minutes. They do tend to brown relatively fast on the bottom, so I tend to under cook them a bit.)
